For the Filling

2 tablespoons olive or canola oil

3/4 cup shiitake mushrooms, stemmed and thinly sliced

1 small yellow onion, thinly sliced

2 tablespoons water

1 1/2 tablespoons lemon juice

8 (8-inch) flour or corn tortillas, warmed3 cups thinly sliced cabbage or coleslaw mix

1/2 teaspoon black pepper
