2 1/2 pounds boneless pork shoulder, cut into 2-inch-thick slabs

2 tablespoons lard or vegetable oil

1 medium onion, sliced 1/8-inch thick

4 long banana peppers (chile guero) or 2 poblano chiles, roasted, peeled and sliced into strips

-- Four 12- by 18-inch rectangles of banana leaves, thawed if frozen

-- About 2 tablespoons vegetable oil for coating the banana leaves

1 medium-large tomato, cored and sliced into 8 rounds
