  • 1/2 medium red onion, cut in wedges

  • 1 shallot, chopped
  • 4 sprigs thyme
  • 1 1/2 cups chanterelle mushrooms
  • 2 Tbsps white wine
  • 1/4 cup diced pancetta
  • Salt and pepper to taste
