Ingredients

The tripe

2 1/2 pounds beef honeycomb tripe

1 large carrot, in chunks

1 large rib celery, in chunks

1/2 large onion

1 bay leaf

The Sauce

1/3 cup extra virgin olive oil

1 onion, minced

1 large carrot, cut in neat, small dice

1 large celery rib, cut in neat, small dice

2 garlic cloves, minced

1 tablespoon minced Italian parsley

Pinch hot red pepper flakes

Enough canned whole tomatoes, pureed through a food mill or in a blender, to yield 2 1/2 cups puree

salt

3 tablespoons chopped fresh mint

Freshly grated pecorino cheese
