  • 1 cup yellow cornmeal
  • 1/2 lb bacon, chopped
  • Salt and pepper
  • 2 Tbsps chopped garlic
  • 2 celery stalk, chopped
  • 1 lb link andouille sausage, cut into 8 each (2-oz) portions
  • 1 lb red beans, soaked overnight and drained
  • Oil for pan-frying
  • 1 Tbsp chili powder
  • 2 Tbsps olive oil
  • 1 egg
  • Yields: about 2 cups
  • 8 (8-oz) redfish fillets
  • 1 bunch green onions, grilled
  • 4 bay leaves
  • Spicy Red Bean Sauce (recipe follows)
  • 1 green pepper, chopped
  • Salt and cayenne
