4 1/2 lbs mussels , beards and barnacles removed

20 black olives

3 tablespoons heavy cream

1 head garlic , roasted whole

For the mussels

3 tablespoons calvados

3 tablespoons unsalted butter

4 shallots , finely diced

1 bunch parsley , chopped

2/3 cup sweet apple cider

2 garlic cloves , crushed

2 tablespoons butter
