4 7-ounce chicken breasts with bone attached

2 red Bartlett pears, sliced lengthwise and cored

4 ounces baby spinach leaves, washed well

4 ounces feta or sheeps’ milk cheese

¾ cup champagne or concord grapes, seeded

½ cup dried cranberries

3 tablespoons fresh basil, chopped fine

2 tablespoons lemon juice

Zest of 1 lemon

1/4 cup extra virgin olive oil

2 tablespoons unsalted butter

2 teaspoons sea salt

1 teaspoon fresh ground black pepper

Optional greens: small bitter greens, arugula, red leaf lettuce and baby mustard greens
