1 1/4 cup fresh carrot juice

1/2 cup (minus 1 Tbsp) freshly squeezed orange juice

Juice of 1/2 lemon

1/2 cup butter, cold

3 inch fresh ginger root

3 x scallions

1/4 cup unsalted peanuts, coarsely chopped

1 tbsp canola oil

1 tbsp olive oil

A dash of cayenne pepper

Fleur de sel
