  • 1 tsp kosher salt
  • 1 cup (8 ozs) chilled unsalted butter, cut into 1/4-inch pieces
  • 1/4 cup ice water
  • 2 Tbsps canola oil
  • 2 cups milk
  • 2 cups heavy cream
  • 6 large eggs
  • 1 Tbsp kosher salt
  • 1/4 tsp freshly ground white pepper
  • 6 gratings fresh nutmeg
  • 3 lbs leeks (about 5)
  • 6 ozs Roquefort cheese, crumbled (about 1 1/3 cups)
  • Basic quiche shell
  • Basic quiche batter
