Ingredients for 4 servings

1 pound asparagus, medium size, peeled

½ pound button mushrooms

1 cup celery, peeled, ¼” slice

½ cup red onions, peeled and minced

1/2 cup Nicoise olives, pitted and sliced

2 tablespoons capers, non peril and rinsed

2 tablespoons garlic, peeled and minced

2 tablespoons dijon mustard

Juice and zest of 2 lemon

1/3 cup extra virgin olive oil

1/3 cup Champagne vinegar

1/3 cup Italian parsley, chopped

1/3 cup basil, chopped

2 tablespoon tarragon leaves, chopped

Kosher salt

Fresh ground black pepper

1 cup or large handful of baby arugula

4 ounces aged Manchego cheese, shaved (or other hard cheese like aged pecorino)
