175 g free range bacon, excess fat removed, lean meat very finely chopped

Light olive oil for cooking

3 plump garlic gloves, peeled and minced

100 g brown onion, peeled and very finely chopped

130 g red capsicum (bell pepper), deseeded and very finely chopped

180 g button or Swiss brown mushrooms, cleaned and very finely chopped

12 g long red chilli, de-seeded and very finely chopped

Dried chilli flakes (optional)

55 g fresh basil, torn

30 g pine nuts, toasted

Zest and juice half a lemon

Pinch caster/superfine sugar

30 g parmesan cheese, grated

Salt and freshly ground black pepper

Extra parmesan cheese, grated

5 free-range medium-sized eggs

500 g pasta 00 flour
