15 Ingredients

  • 1/2 cup chopped white onions
  • 2 Tbsps nam pla (Thai fish sauce)
  • 2 cups diced eggplant (1/2-inch dice)
  • 2 Tbsps vegetable oil
  • 2 tsps minced garlic
  • 2 to 4 Tbsps Thai green curry paste, depending on desired degree of heat
  • 1 cup thinly sliced green bell peppers
  • 8 lime wedges, garnish
  • Steamed white rice, accompaniment
  • 1 (14-oz) can unsweetened coconut milk
  • 1/2 cup chopped Thai basil (if unavailable use 1/2 Italian basil, 1/2 mint)
  • 6 Kaffir lime leaves, or 1 Tbsp finely grated lime zest
  • 1/4 tsp salt
  • 1 cup shrimp stock, fish stock or bottled clam juice
  • 1 1/2 lbs medium shrimp, peeled and deveined
