1 extra large eggplant

Salt

1/4 cup olive oil, plus more to finish

2 shallots, chopped (1/2 cup chopped)

2 pimento pepper, chopped (1 cup chopped; you can substitute red bell pepper)

2 fryer peppers, chopped (1 cup chopped; you can substitute green bell pepper)

3 tablespoons tomato paste

2 28-ounce can chopped tomatoes

8-10 fresh basil leaves, washed

1 bunch swiss chard (optional)

Freshly ground pepper
