Ingredients

The pickled carrots and daikon

3/4 cup shredded carrot

3/4 cup shredded daikon

1/4 cup distilled white vinegar

1/4 cup sugar

1/2 teaspoon kosher salt

The tuna

-- juice of 1 lime

1 tablespoon soy sauce

2 tablespoons fish sauce

1 tablespoon toasted sesame oil

1 tablespoon sugar

1/4 teaspoon fresh ground black pepper

1 to 1 1/2 pounds tuna steaks

The sandwich

1 long italian loaf or a baguette (about 12 ounces)

1/4 cup mayonnaise

1/2 english cucumber, peeled, halved lengthwise and cut into slices about 1/4-inch by 3 inches

1 jalapeno pepper, seeds removed and thinly sliced

3/4 cup loosely packed cilantro leaves (optional)
