1 (12 to 15-pound) organic turkey


1 1/2 cups maple syrup

1 cup sea salt

2 whole bay leaves

10 cloves garlic, peeled and mashed

1 cup roughly chopped fresh sage

1 cup roughly chopped fresh thyme

1 cup roughly chopped fresh Italian parsley

1/2 cup fresh oregano or marjoram

1/2 cup fresh rosemary

1 teaspoon freshly ground white pepper


4 tablespoons Ghee or olive oil

2 teaspoons sea salt

2 teaspoons paprika

2 tablespoon nutritional yeast

Seasoning mixture:

1 cup chopped apple

1 cup chopped onion

1 to 2 whole lemons

Several large sprigs of sage, thyme, rosemary, oregano, and parsley
