3 x scallions, diced

1 15 oz. can corn, drained (or 3-4 cups fresh off the cob)

1 medium jalapeno, finely diced

1/3 cup chopped cilantro

salt and pepper to taste

1 tbsp dijon-style mustard

2 tbsp cider vinegar

2 tbsp canola oil

1 or 2 tbsp honey
