Roasted Pear And Blue Cheese Salad W/Date Honey Vinaigrette

Ingredients for 12 servings

For the Salad

4 bosc pears peeled cut in half

1-2 Tablespoons Olive oil

1 -2 Tablespoons Sugar

Kosher Salt

1 cup crumbled bleu cheese or Goat Cheese

2 cups candied pecans or candied walnuts

1 Costco box mixed greens

4-5 small Israeli cucumbers with peel sliced thin

Croutons

For the Dressing

1/3 cup Date Honey or syrup (available at Hillers in kosher food section or Mediterranean markets called Silan)

1/3 cup white wine Vinegar or juice of one lemon

1 tablespoon minced shallot

1 garlic clove pressed

Whisk and drizzle in

1/3 cup olive oil (you can use less)

Preparation

1.

Pre-heat oven to 350° degrees

Use mandolin to slice pears ¼” thick or thinly slice by hand

3.

Place cut pears in a bowl, toss with olive oil and sugar

4.

Spread pears in a single layer on baking sheet and roast in oven until they begin to brown. This takes about 15-20 minutes. Check often, you do not want to burn pears

5.

Remove from oven and cool. At this point they can be stored for a couple of days. Put greens and cucumbers into a very large bowl, add ¾ of the bleu cheese, pears and pecans toss with dressing

6.

Reserve ¼ of toppings to garnish after salad is dressed
