Mincemeat Cake

I love mincemeat pie at Christmas time but I haven't perfected my pie crust yet. This cake lets me enjoy the flavors of mincemeat pie without any fuss!

Ingredients for 12 servings

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

2 eggs, room temp, separated

2 tbsps bourbon

1 stick butter, softened

1 cup sugar

2 cups mincemeat

1 1/2 cups pecans, chopped

1 cup golden raisins

Preparation

Set oven to 325°. Grease and flour a 12 cup bundt or tube pan.

Whisk flour, baking soda, and salt in a medium bowl. Whisk the egg yolks and bourbon in another bowl.

Whisk the egg whites on medium-high to soft peaks and set aside. Beat the butter and sugar together on medium-high until fluffy. Reduce the speed to medium and add the egg yolk mixture, mixing until incorporated. Add the mincemeat and mix until combined. Reduce speed to low add the flour mixture and mix until combined. Fold in the pecans, raisins, and egg whites.

Scrape the batter into pan and bake for 60 mins, until a toothpick comes out clean. Cool in pan for 10 mins, turn out into rack and cool for at least an hour.
