50.0g baby spinach leaves

1.0 tbsp rice or white wine vinegar

85.0g (or a big handful) bean sprouts

1.0 tbsp teriyaki marinade (we used Kikkoman), plus more if you like

1.0 tsp sugar

bunch spring onions , finely sliced

2 hot-smoked, peppered mackerel fillets

½ cucumber , halved, deseeded and sliced

100.0g basmati rice
