3 tablespoons vegetable stock

2 garlic cloves , minced

1/2 cup fresh basil , sliced into thin shreds

QUINOA

1 tablespoon mirin

1 cup quinoa

1 hot red chili pepper , sliced into very thin rounds

3 tablespoons peanut oil

1 cup cold water

1 cup pineapple juice

2 tablespoons fresh mint , finely chopped

4 ounces raw unsalted cashews

1 cup edamame , cooked

2 cups fresh pineapple , cut into bite-size chunks
