Ingredients for 4 servings

1 un-dyed smoked haddock fillet, fillet

500 ml of semi skimmed milk

200 ml of fish stock

1/2 onion, finely diced

1 garlic clove, crushed

150 g of potato, peeled and cut into 2cm dice

50 g of mustard seeds, soaked

4 small eggs

2 handfuls of cress

vegetable oil

salt

pepper

lemon juice to taste

1 knob of butter
