1 small shallot, chopped

Zest from 1/2 lemon, finely chopped

Juice of 1 lemon

1 tablespoon tahini

1 tablespoon plain yogurt

1/8 to 1/4 teaspoon ground cumin, or to taste

2 tablespoons extra virgin olive oil, or as needed

Coarse sea salt or kosher salt, to taste

Black pepper, to taste

1 bunch radishes

1 cup snap peas, cut on the bias into long somewhat narrow strips, or snow peas

Handful of pea tendrils or shoots, if available

Big handful of fresh mint leaves

3 tablespoons fresh dill sprigs

1 tablespoon fresh tarragon leaves

3 to 4 endives, thinly sliced crosswise
