1 1/2 cups canned garbanzo beans or canned chickpeas , 15 1/2-oz can drained

1/3 cup wheat germ

3 garlic cloves , minced

1 tablespoon ground cumin

4 pita breads or hamburger buns

1/2 teaspoon fresh ground black pepper

4 slices tomatoes (optional)

1 cup cooked brown rice or cooked white rice

2 teaspoons canola oil

1 tablespoon ground coriander

4 lettuce leaves (optional) or spinach leaves (optional)

1/2 teaspoon pure chile powder

4 scallions, finely chopped
