1/3 cup fresh lime juice (about 2 small limes)
1/4 cup olive oil
1 small clove garlic, minced
1 can black beans, rinsed and drained
1 cup frozen corn kernels (or 1 small can, drained)
1 avocado, cut into chunks
1 bell pepper, chopped
2 tomatoes, chopped
Place lime juice, olive oil and garlic in a small container. Cover with lid and shake until well mixed.
In a salad bowl combine beans, corn, avocado, bell pepper and tomatoes. Shake lime dressing again and pour over the salad. Stir to coat.
