Ingredients for 12 servings

200.0g golden caster sugar

4 eggs

300.0g pack frozen raspberries , defrosted, or use fresh

4.0 tbsp Malibu (or you could use white rum)

4.0 tbsp icing sugar

370.0g jar raspberries jam

142.0ml pot double cream

Ingredients FOR THE CAKE

1.0 tbsp milk

FOR THE LAYERS AND TOPPING

2.0 tbsp from a 200 ml pack coconut cream (keep the rest for the filling)

200.0g butter , softened, plus extra for greasing

1.0 tsp baking powder

50.0g unsweetened desiccated coconut , soaked in water for 1 hr then squeezed dry

1.0 tbsp cornflour

600.0ml good-quality ready-made custard from the chiller

200.0g self-raising flour

zest and juice 1 lime

fresh coconut , shredded, for decoration (optional)
