Ingredients for 34 servings

2 tablespoons chopped fresh cilantro leaves

3 green onions, white parts only, finely chopped

* Panko, coarse Japanese bread crumbs, can be found in Asian markets or produce shops

1/4 teaspoon cumin seeds

1/2 cup 1/4-inch cubes peeled jicama

1/4 teaspoon freshly ground black pepper

3/4 pound crabmeat

3 cups panko bread crumbs*

1/4 cup heavy cream

Vegetable oil, for frying

2 egg whites

3/4 pound raw shrimp, peeled and deveined, tail removed

3 minced kaffir lime leaves

Ginger-Lime Sauce, recipe follows

Special equipment: a deep fryer, slotted spoon or spider and rasp

1 1/2 teaspoons kosher salt

1 1/2 tablespoons rasped or finely grated ginger
