1 small bunch baby bok choy or Shanghai baby bok choy (1 pound)

1 tablespoon peanut or vegetable oil

1 teaspoon finely minced ginger

1/4 teaspoon salt

1/2 cup light chicken stock

1 1/2 tablespoons oyster sauce

1 tablespoon Chinese rice wine or dry sherry

1/2 teaspoon sugar

1 1/2 teaspoons cornstarch mixed with 1 1/2 teaspoons water

1/2 teaspoon Asian sesame oil (optional)
