Ingredients for 6 servings

1 cup brown rice flour

1 dash of xanthan gum

1 pinch of salt

2 eggs

1 1/2 cups unsweetened So Delicious coconut milk

dash of vanilla

Preparation

1.

In a bowl, mix your dry ingredients: 1 cup brown rice flour 1 dash of xanthan gum 1 pinch of salt

In a second bowl, mix your wet ingredients: 2 eggs 1 1/2 cups unsweetened So Delicious coconut milk dash of vanilla

Mix wet and dry ingredients together: You’ll want the batter to be fairly thin. If it doesn’t look runny, you’ll want to add a little more coconut milk. Sprinkle in some nutmeg and cinnamon for a little flavor boost. *Try with Jalepeño Peach Preserves! You will be surprised what an incredibly delicious combo it makes.
