2 x large hard boiled eggs, chopped

Kosher Salt, to taste

6 x scallions, thinly sliced on an angle

2 tbsp drained capers

1/2 cup reduced fat mayonnaise

1/4 cup Dijon mustard

1/4 finely chopped dill pickles with 1/4 cup cup juice, about 2 pickles

1 x small red onion, chopped

2 tbsp chopped fresh flat leaf parsley

1/2 x Lemon, juiced

Freshly ground black pepper to taste

6 x caper berries, sliced

6 x Extra Virgin Olive Oil, for drizzling
