1/4 teaspoon fish sauce

1 teaspoon finely chopped ginger

4 roasted red bell peppers, peeled, seeded and chopped

12 scallops

1 lime, cut into wedges

Cilantro leaves

2 cloves garlic, finely chopped

2 tomatoes, chopped

1 yellow onion, chopped

Red Pepper Jam

2 red Thai or serrano chile, seeded and finely chopped

1 1/2 tablespoons canola oil

Scallops

Mint leaves

Juice of 1/2 a lime

Salt and pepper to taste

1/2 cup chopped roasted cashews

2 1/2 tablespoons brown sugar
