1/3 c Chimichurri Sauce (Chimichurri is a slightly spicy South American condiment made of oil, vinegar, and fresh herbs.)

1/4 c onion, finely chopped

1/2 c parsley, finely chopped

3 T cilantro, finely chopped

3 cloves garlic, minced

1/2 t salt

1/2 t cumin, ground

1/2 t red pepper, crushed

1/4 t black pepper, ground

1/2 c olive oil

1/4 c red wine vinegar
