Sweet Potato, Red Bean + Kale Enchiladas W/ Smoky Sweet Pepper Sauce & Coriander Chimichurri

I made this and it was SO good! Next time, I would double the quantity of chimichurri (it was delicious and we wanted more!) and halve the quantity of kale (we had a ton left over). Overall, highly recommended!

Ingredients for 6 servings

6 corn or wheat tortillas (you can fry the tortillas first in a hot pan if you prefer)

Cumin Roasted sweet potato w/ Grilled Corn

Smoky Sweet Pepper sauce

Red bean Hummus

Braised kale

1-2 cups vegetarian or vegan cheese, grated

¼ cup pumpkin seeds

Coriander chimichurri

Handful of coriander leaves

1 green chili sliced, optional
