Loved it! Used green beans instead of asparagus and spinach instead of parsley.. And also added some avocado when it was done.. Turned out SO delicious!!

Ingredients for 4 servings

1¾ cup reduced-sodium chicken broth

1 cup quinoa, rinsed and drained twice

3 Tbsp olive oil

2 tsp minced garlic

1 cup diced orange bell pepper

1 cup diced red bell pepper

1 cup chopped asparagus

1 cup diced zucchini

½ tsp salt, plus more to taste

½ tsp black pepper, plus more to taste

1 Tbsp lemon juice, plus more to taste

½ cup crumbled feta

1 Tbsp chopped fresh flat-leaf parsley
