1 onion, medium-diced

2 carrots, diced

2 stalks celery, diced

1 parsnip, diced

½ head Savoy cabbage, shredded

1 zucchini, diced

2 clove garlic, minced

1 Tbsp fresh thyme leaves

2 tsp kosher salt

1 tsp freshly ground pepper

1 (28-oz) can tomatoes, chopped, with their juice

1 15- oz can Great Northern beans, drained and rinsed

2 quarts chicken stock

½ cup dry white wine

Grated Parmigiano-Reggiano cheese, for serving
