Ingredients for 4 servings

1 large red onion, diced

1 cup of celery, diced

1 cup carrots, diced

2 tablespoons extra virgin olive oil

1/4 teaspoon red pepper flakes

1/4 teaspoon nutmeg

1 lb of lean ground lamb or 95% lean ground beef

1/4 teaspoon sea salt

1/3 cup red wine, merlot or cabernet, or ya know, whatevs leftover!

28 oz. can organic tomato sauce, NOT the sweet processed junk in the jar! The pure canned good stuff!

1/3 cup of water

1 tablespoon chopped Italian flat-leaf parsley (optional)

8 oz papperdelle pasta noodles
