2/3 cup bottled clam juice

1 cup shredded Cheddar

1¼ cups whole milk

1 cup fresh whole wheat bread crumbs

2 tbsp butter , plus more for the dish

½ cup freshly grated Parmesan

2 tbsp all-purpose flour

pinch of grated nutmeg

2 tbsp chopped parsley

1½ lb (675g) skinless haddock or cod fillet, cut into 4 serving pieces

salt and freshly ground black pepper

9 oz (250g) fresh spinach , well washed, stemmed, and chopped
