Ingredients for 6 servings

1 ½ pounds undyed smoked haddock fillets, pin bones removed

1 medium onion or 1 bunch of spring onions , finely chopped

1 clove of garlic , peeled and finely chopped

1 small conatiner natural plain yogurt

½ cup butter

2 tomatoes , deseeded and chopped

thumb-sized piece of fresh ginger , grated

1 red chili , deseeded and finely chopped

a large bunch of fresh coriander , leaves picked and roughly chopped

1 tablespoon mustard seeds

6 ounces long grain or basmati rice

2 eggs , preferably free-range or organic

juice of 2 lemons

2 fresh bay leaves

2 heaped tablespoons curry powder
