Ingredients for 6 servings

2 pounds tomatoes

3 ears of corn, kernels cut off the cob (about 1 1/2 cups) and coarsely chopped

2 tablespoons finely chopped fresh basil

1 tablespoon minced fresh chives

Several grinds black pepper

1/2 teaspoon salt

Few dashes hot sauce

6 ounces sharp cheddar, shredded (if you get an 8-ounce block of cheese, you can use the remainder in the biscuit crust)

1/3 cup mayonnaise

2 tablespoons fresh lemon juice

2 cups all-purpose flour

1 tablespoon baking powder

1 1/2 teaspoons coarse salt

6 tablespoons cold butter, cut into cubes

2 ounces sharp cheddar, shredded and tossed with a spoonful of flour

3/4 cup buttermilk

1 to 2 tablespoons farina (such as Cream of Wheat), or similar finely ground grain cereal

2 tablespoons melted butter
