Melon & Heirloom Tomato Salad With Pickled Watermelon & Melon Shot

Ingredients

pickled watermelon rind:

-- Rind from 1/2 of a mini-seedless watermelon (about 2 1/2 -3 pounds); reserve flesh for the salad

1 tablespoon pickling salt (or about 1 1/2 tablespoons kosher salt)

2/3 cup sugar

1/2 cup rice vinegar

1 teaspoon mustard seed

1/2 stick cinnamon

1 whole clove

Melon shots:

2 Galia melons

12 to 20 mint leaves

-- Juice of 1 1/2 limes

salad:

2 Charentais melons or cantaloupes

-- Flesh of 1/2 of a mini-seedless watermelon (see above)

-- Juice and zest of 1 orange

-- Zest of 1 lime

4 small heirloom tomatoes, cut into quarters

4 basil leaves, cut in chiffonade

2 mint leaves, cut in chiffonade

1/2 teaspoon extra-virgin olive oil

1 teaspoon balsamic syrup or aged balsamic vinegar

-- Pinch of sea salt

-- black pepper to taste
