Ingredients for 6 servings

1 x chicken cut into 10 pieces, or 8 pieces of chicken thighs and/or drumsticks

3 tbsp olive oil

1 x green pepper, chopped

1 x yellow onion, chopped

4 x cloves garlic, chopped

2 x tomatoes, chopped

3 x carrots, sliced

2 x zucchini, sliced

1 cup fava beans or peas, blanched for 1 minute (and peeled, if you use favas)

2 tsp Spanish paprika

big pinch of saffron

2 cup short-grain rice (can sub long grain)

3 1/2 cup stock or water

1/2 cup white wine

1 x bay leaf

1 tbsp fresh parsley, chopped

1 x lemon

salt and pepper
