Ingredients for 4 servings

230 g plain all-purpose flour

140 g unsalted butter, at room temperature

60 g caster sugar

1 egg

Pinch of salt

1 vanilla pod, split and seeds scraped out

6 egg yolks

Zest of 2 limes

160 g caster sugar

100 g elderflower syrup or cordial

500 g crème fraîche, drained weight

500 g strawberries, hulled and frozen individually

70 g caster sugar

Juice of half a lemon

1 tbs berry liqueur

1 free-range egg white

150 g fresh overripe strawberries, hulled

20 g caster sugar

2 leaves of gelatine, soaked

500 ml peanut or ground nut oil

20 g dried strawberries

¼tsp citric acid (normally used to make elderflower cordial, obtained from pharmacies)

1 tsp bicarbonate of soda

60 g sifted icing sugar

4 whole fresh strawberries, hulled

20 ml elderflower liquor (St Germain)

1 sprig of summer savory finely chopped
