Ingredients for 6 servings

4 tbsp olive oil, as needed

1 x package firm tofu

6 x garlic

2 yellow onions, sliced into thin wedges + 2 dozen pearl onions x yellow onions, sliced into thin wedges + 2 dozen pearl onions

2 tsp shallots, thinly sliced

1 tsp cinnamon, broken in half

1/2 x cumin seeds

1 x fennel seeds

1 tsp whole star anise

5 x cloves

2 tsp coriander seeds

4 tsp green cardamom pods

1/4 tsp nutmeg, freshly ground

1 tsp smoked paprika powder

1/3 tsp cayenne powder

1 tsp garlic powder

1 tbsp ginger powder

1 tsp turmeric powder

2 x full-fat Greek yogurt

2 tbsp lemon zest, finely chopped

1 tsp chunk fresh ginger, thinly sliced

1-1/2 cup salt

1/2 cup white peppercorns, freshly ground

1/3 pinch golden raisins

1/4 x honey

4 oz saffron threads

2 cup dried red chiles

14.5 cup diced tomatoes with the juice

1/4 x sun-dried tomatoes

1/2 x baby peeled carrots

2 x bay leaves

5 x apricots, halved and pitted

12 oz dates, halved and pitted

12 x cremini mushrooms, cut into thick slices

14 tsp artichoke hearts, drained, rinsed and halved

3 cup Yukon potatoes, diced in large cubes

1/2 oz liquid smoke

3-1/4 tbsp low sodium vegetable broth, up to 4 cups depending on how thin you like the sauce

15 x cannellini beans, drained and rinsed

3 x curly parlsey
