2 tbsp soy sauce

3 15-oz cans black beans, rinsed

1 15-oz cans diced tomatoes

1 x chipotle pepper with 2 Tbsp adobo sauce from the can

1 tbsp canola oil

1 x onion, diced

1 tbsp chili powder

2 tsp ground cumin

juice of 1 juicy lime

big handful of chopped fresh cilantro

1 x avocado, diced

salt and pepper

grated cheddar cheese (optional)
