1 pinch crushed red pepper flakes (to taste)

1 cup long grain brown rice or short grain brown rice

1 garlic clove

1/2 cup sliced scallion top , divided (not the tops)

2 1/2 cups water

1 strip orange zest (2 by 1/2 inch long)

5 tablespoons rice vinegar , divided

1 cup fresh raspberry or frozen raspberries

1 1/2 lbs boneless chicken thighs, skinless, trimmed, each cut into 3 crosswise strips

1 tablespoon fresh ginger , chopped

3/4 cup hoisin sauce (thick spicy or sweet sauce found in the Asian section of your store)

1/8 teaspoon fresh ground black pepper
