1 (4 to 5 pound) free-range or organic chicken

3/4 teaspoon coarse sea salt per pound of chicken

4 to 5 teaspoons tandoori spice mix (1 teaspoon per pound of chicken)

Grated zest and juice of 1 lemon

Chicken stock, as needed

4 to 5 cups bread cubes (from 1 loaf of day-old bread)

1 tablespoon neutral cooking oil

1/2 teaspoon mustard seeds

1/2 teaspoon whole black peppercorns

10 to 12 fresh curry leaves

1 small onion, finely diced

3 small tomatoes, chopped

1 tablespoon sugar

Salt to taste

Fresh salad leaves, to serve
