I found this pretty boring on its own. I ended up adding extra veggies and some organic crunchy peanut butter to give it more flavour. It was quick and my end result was good, but by the time I finished it was nothing like the recipe

I will make it again but it was a bit salty for my tastes - I'll play with it. I did add blanched snap peas for extra veggies, yummy!

Ingredients for 2 servings

3-4 ounces soba noodles

1 red pepper

2 scallions

4 tablespoons low-sodium soy sauce

1/2 teaspoon mustard

1 teaspoon honey

Dash of black pepper

Red pepper flakes (optional)
