Ingredients for 6 servings

6 beets, greens removed, washed and chopped

2 red onions, sliced

8 basil leaves, chiffonade

1 cup olive oil

1 cup crumbled feta cheese

1/2 cup walnuts chopped, ok to sub hazlenuts, toast if desired

1/2 cup balsamic vinegar

Preparation

1.

Preheat oven to 400F

2.

Wrap beets in foil, put on baking dish, bake 1 hour or until soft then set aside to cool

3.

Heat a grill pan and grill sliced onion until marked on both sides until soft (or heat on the grill) cool, chop and add to a bowl

4.

Peel the beets, chop and add to bowl

5.

Sauté beet greens in a tablespoon of olive oil

6.

Add greens and nuts to bowl

7.

Add vinegar, olive oil, basil and feta

8.

Toss and serve room temp
