Ingredients for 4 servings

1 lb pappardelle pasta (fresh is preferable)

1 tablespoon olive oil, plus a drizzle to finish

3 cloves garlic, minced

1/2 onion, thinly sliced

1 lb sweet Italian sausage, cut into 1″ slices**

1 8-ounce package white button or baby bella mushrooms, cleaned, stemmed and cut into 1/2″ slices

1 tablespoon fresh thyme, chopped

1/2 cup sweet marsala wine

1 1/4 cup cream

1/2 pint (8-ounces) roasted red peppers, sliced

3/4 cup cherry tomatoes, washed

Grated Parmesan cheese, to serve

Salt and freshly ground pepper
