1 large head romaine lettuce, or 2 small heads (select solid heads)

Chile oil to taste (see recipe)

1 egg, coddled (optional, see note)

3 garlic cloves, crushed

4 to 6 anchovy fillets

3 tablespoons fresh lemon juice

1/2 cup olive oil

Salt to taste

2 hard-cooked eggs, chopped

1/2 cup grated Parmesan cheese

1 small red bell pepper, roasted, peeled and cut into thin strips
