1 cup chopped yellow onion

1 teaspoon red pepper flakes

1/4 cup fresh lemon juice

1 tablespoon cayenne pepper

1 cup Bourbon whiskey

1/4 cup red wine vinegar

3/4 cup brewed strong black coffee

2 tablespoons Worcestershire sauce

2 tablespoons cane syrup or dark molasses

1 tablespoon onion powder

2 teaspoons minced garlic

1 tablespoon Essence, recipe follows

1/4 cup vegetable oil

1 tablespoon black pepper

2 tablespoons garlic powder

1/2 teaspoon salt

1 cup ketchup

1/2 cup packed dark brown sugar

1 teaspoon grated lemon zest

2 whole racks baby back pork ribs, about 4 pounds, cut in half

2 tablespoons salt

1 jalapeno, seeds and stem removed, and minced

1/2 teaspoon ground black pepper
